Winemaker Notes
The fruit was harvested in excellent condition from our certified organic willow block at Tetley Brook vineyard in the Awatere Valley. The grapes were proctected from oxidation and quickly pressed off skins. Fermentation took place in tank at 18C . After some month on lees the wine was fined and bottled. Strict organic procedures were followed at all times.
Food Pairing
Oysters, scallops, crab, clams, lobster, prawns - any shellfish with zingy flavours or a citrus or garlic marinade or dressing. (Big fat garlicky prawns - yum!
