Organic Marlborough Sauvignon Blanc

An approachable, captivating style of Sauvignon Blanc that beautifully reflects the vineyard’s terroir, crafted from our organic certified, Headwaters Vineyard, in the Wairau Valley. Crisp and dry, with good depth, texture and length, offering citrus and apple flavours, with mineral and spicy notes.

TASTING NOTES

Initial aromas of blossoms and lime soon joined by mandarin, cinnamon and a touch of thyme. Complex and inviting.

Focused, fruity entry of blackcurrant and lime evolving into a fruit bowl of flavours including grapefruit, apple and guava. Lively and exciting with a lingering mineral finish.

Fruit from our certified organic Headwaters Vineyard was harvested in late March. The grapes were quickly pressed, clarified and fermented. A combination of selected commercial and indigenous yeasts (40%) where used to capture the intense varietal flavours and build complexity. Malolactic fermentation softened and added texture to the palate. Strict organic procedures were followed at all times.

Complex and tropical with ripe citrus and guava. Green tea, flint and spice.

Driving and dense palate with great length and lush flourishes on the mid palate. Flavours of orange and grapefruit mingle with gooseberry and blend into a mineral slate finish.

TASTING NOTES

Lime and gooseberry aromas with fennel, a hint of blackcurrant, and a spice/ mineral note. Expansive fruit salad entry moving to a strong citrus theme- lime, mandarin dominate the mid-palate. This is followed up with floral elements and tarragon with a lingering taste of pineapple.

Fruit from our certified organic Headwaters Vineyard was harvested in early April. The grapes were quickly pressed and after a little juice lees contact, clarified and fermented. A combination of selected and indigenous yeasts where used to capture the intense varietal flavours and build complexity. Malolactic fermentation softened and added texture to the palate. Strict organic procedures were followed at all times.
