Tasting Notes
Citrus notes of lime and oranges. Toffee, apricot and clover honey evident with floral elements too. A complex botrytised, (noble), nose.
Intense and fresh stone fruits and lime on entry. Honey and caramel flavours mingle with the fruit on mid-palate and lingers on the finish. Rich, sweet and viscous with a zesty focus. Great balance.

Winemaker Notes
Grapes were left on vine and the noble botrytis rot encouraged to develop. The fruit was then hand picked and the shrivelled noble bunch's selected for this dessert style wine. After crushing and steeping in the juice exuded, the berries were slowly pressed over many hours to obtain a vert sweet and concentrated syrup. This was then slowly fermented in a stainless steel vat and oak casks. The resultant wine retain a high level of residual sugars and great intensity.
Food Pairing
Firm and semi firm cheeses, dried fruit and nuts.
