Cowslip Valley Vineyard - Waihopai Valley
Firm and semi firm cheeses, dried fruit and nuts.
The most botrytised bunches were hand selected on the 8th of June. The grapes were gently whole bunch pressed. 16% was fermented in lightly toasted new and older French oak barriques with the remaining fermented at cooler temperatures in tank. After 6 months the wine was assembled and bottled.
