Babich was one of the first wineries in New Zealand to utilise inert gas presses for our winemaking.
The gas press allows us to handle our fruit without the influence of oxygen, which can reduce flavour components. This is particularly beneficial for the delicious notes in our Sauvignon Blanc. Inert gas presses cost $40,000 more than standard presses but the flavoursome result is well worth the investment.
