There’s a pH meter in the Babich lab for measuring the acid content of wines.

It’s the old kind with an analog needle, long since superceded by digital readouts. But the Babich winemakers insist on still using it. An analog meter tells you so much more than just its final reading; the way the needle moves speaks volumes to someone who can interpret what it has to say.
