Sustainable Winegrowing New Zealand is an integral part of the future of New Zealand wine production, and Babich Wines developed the first vineyard in New Zealand to achieve registration. With our ongoing commitment to protect the environment, through implementing sustainable practices in all our vineyards, it was a logical progression to move to the next step and investigate the benefits of an organic approach to viticulture. Our Headwaters Vineyard is farmed in compliance with organic standards.

Production Notes:

The fruit was harvested in excellent condition from our certified organic Headwaters Vineyard near Renwick in Marlborough’s Wairau Valley. The juice was cold settled then fermented in a mix of new and old French oak and stainless steel vats with indigenous and cultured yeasts. A portion of the wine was then allowed to undergo malolactic fermentation. After a 7 months on lees to increase mouthfeel, oak integration and complexity, the components were blended. This was followed by a light fining. Bottled early 2019.

Tasting Notes:

Pungent with peach, melon and pastry/ oatmeal notes. A touch of Gala apple also.

Juicy, sweet and fresh fruited entry with lemon and lime, more stone fruits - especially nectarine and apricot -and a touch of cashew. Generous, bright and long with a lingering mineral/ oyster shell.

Tasting Notes:

Very aromatic. Peach and lemon curd with savoury cashew notes. Finely textured, and well fruited with nectarine, apple and citrus mingled with sweet pastry and brioche. Fleshy, rich and nicely concentrated.

“Bright straw-yellow colour with some depth and slight pale golden hues, lighter edged.  The nose is softly fresh and broad in expression, with aromas of yellow stonefruits along with subtle nutty notes and a layering of lemon-curd MLF and hints of creamy barrel-ferment.  The nose is refreshing and youthful.  Medium-bodied, the palate has rich and vigorous flavours of white and yellow stonefruits, and citrus fruits entwined with soft, nutty oak and hints of creamy barrel-ferment, unveiling an overlay of lemon-curd MLF.  This has good weight and presence, the flavours filling the mouth, and the palate is enlivened by fresh acidity.  The wine is carried positively by light, grainy, phenolic textures to a long and lingering, fulsome finish.  This is a full and vigorous Chardonnay with stonefruit, citrus, nutty, and lemon-curd MLF flavours.”

Tasting Notes:

Sweetly perfumed aromas - nutty, mealy with lemon blossom and a nice cedar edge. The palate is rich and complex with a zesty citrus burst on entry and nectarine and peach on the mid palate. Savoury elements are also apparent. Nice weight and volume and just a hint of caramel on the long finish.
